Had to try out rainbow cupcakes once I saw them on Spearmint Baby. A wonderful co-worker was celebrating a special birthday, and what girl doesn’t like rainbows? Or cupcakes? Exactly. So I commenced.
It certainly helped that I had access to some of the most potent food coloring ever to exist on earth. (Williams-Sonoma? Pottery Barn? I wish I knew.) But that batter above only has a SINGLE DROP of coloring in it. I wish I was exaggerating, it was just the best dye I’ve ever witnessed.
The cakes themselves were easy to assemble because, well, they’re just cupcakes. It was a little more labor intensive to smooth out the layers of color, but wowee, was it worth it. They emerged from the oven (perfectly) looking like a stormy doppler pattern, little works of art.
And we frosted. And taste-tested. Had to make sure we weren’t going to poison the whole office. Good to go. Very good.

Those look awesome. I’ve been trying to get someone to make those with me for a few weeks now but nobody’s been taking the bait. I saw some online that were decorated with extreme airheads and frosting to look like clouds… so cute.
